Fried Tamale Egg & Cheese Skillet

Every Christmas eve we make tamales with a group of friends. My friend Ginger told me to fry up the leftovers, add eggs and cheese. This is now my favorite way to eat tamales. It's all about the crispiness.

Ingredients

2 tablespoons of olive oil (or enough to create a light coating on the pan)

6 tamales, cut into slices

6 eggs, beaten

cheddar cheese, grated

Salsa

Directions

1Preheat the broiler.

2Heat a pan (preferably a cast iron skillet) on medium high. When hot, add olive oil and then add the tamales in the pan.

3Fry it for 3 minutes on each side, it should get crispy and golden brown. Then add the eggs. Cook until set. Cover with cheese. Put the skillet under the broiler until the cheese is melted.

4Serve with salsa.
