Dijon & Dill Creamed Pea Sauce

This Dijon & Dill Creamed Pea Sauce is so simple to make and would work well on both chicken and fish.

Ingredients

2 tablespoons butter

2 tablespoons all-purpose flour

½ teaspoon salt

⅛ teaspoon ground turmeric

1 cup chicken stock

1 tablespoon Dijon mustard

1 cup heavy cream

2 cups frozen peas

3 tablespoons fresh dill, chopped

Directions

1In a medium sauce pan heat butter over medium heat until melted. Whisk in flour, salt, and turmeric; cook and stir for 2 minutes. Add stock all at once. Cook and stir until thickened and bubbly. Whisk in mustard and cream; bring to boiling. Stir in peas. Reduce heat and simmer, uncovered, for 9 minutes or until peas are just tender and sauce reduces to a gravy-like consistency, stirring frequently. Remove from heat and stir in dill. Serve over chicken or salmon.
