Curried Shrimp Croustades

I have a lot of catering “secrets” and won’t divulge many, but these Curried Shrimp Croustades I will part with.  It’s a wonderful recipe, that is incredibly easy, a huge crowd pleaser and you can make them in advance and freeze them.

  • Prep: 10 mins
  • Cook: 10 mins
  • Yields: Makes 48 pieces

Ingredients

1 cup Cheddar cheese, grated

1 cup mayonnaise

6 ounces tiny shrimp

1 teaspoon curry powder

3 green onions, chopped

6 English muffins, split

Directions

1In a medium bowl, mix Cheddar cheese, mayonnaise, shrimp, curry powder and onions.

2Toast muffins.

3Spread shrimp mixture on muffin halves and broil until bubbly.

4Cut each muffin into 4 pie shaped wedges and serve warm.

Note:

1Can be made in advance and frozen before broiling.

Good question! Put them on a baking sheet for 30 – 60 minutes before broiling.

These are Barbara Walters favorite! You can make them and freeze on a baking sheet, then once frozen put them in a ziplock bag. That way you can pull out what you need.

You assemble the whole thing. Freeze on a baking sheet, then once frozen put them in a ziplock bag. That way you can pull out what you need. They are VERY good. People love these.

this sounds amazing. so quick question 0 do you freeze the shrimp after you toasted the bread put together – or do you freeze the cheese and shrimp before you put on the bread?
