Cuban Style Rice and Peas

This Cuban Style Rice and Peas is another versatile dish where you can add left over chicken pieces, or ham. This rice freezes well. Reheat in microwave with a about a 1-2 Tablespoons of water. Serve this with Cuban Pineapple Chicken and Havana Black Beans.

Cuban Style Rice and Peas

Ingredients

1 Tablespoon Extra Virgin Olive oil

4 ounces tomato sauce

3 cups of Chicken Broth

1 teaspoon cumin

1 teaspoon oregano

1 teaspoon black pepper

1 teaspoon kosher salt

1 small bag of frozen small baby peas

1½ cups long grain rice

Directions

1In a medium sauce pan, add broth, tomato sauce, oil, spices and rice and bring to a boil.

2Cover, reduce heat and simmer 20 minutes or until water is absorbed.

3Stir in peas and serve.
