Chicken Zorba

This Chicken Zorba recipe is my nephew’s favorite dinner. It’s a recipe from a Sainsbury’s card from the early ’90s. I have to say, I understand why it’s his favorite dinner. The chicken is so tender (due to marinating it overnight) and flavorful. Also, the hummus and Greek yogurt mixture is heaven!

Chicken Zorba

Ingredients

4 chicken breasts, cut into pieces


1/2 teaspoon turmeric


1 teaspoon cumin


1 teaspoon dried coriander


the juice of 1 lime

1/2 cup of hummus


2 - 3 Tablespoons of greek yogurt

1 bag of salad


1 tomato


1 red pepper

pita bread

Salad Dressing

3 Tablespoons extra virgin olive oil


1 Tablespoon red wine vinegar


1 teaspoon dijon mustard (smooth or grainy, your preference)


1-2 cloves of garlic
, crushed

salt and pepper, to taste


Directions

1Marinate chicken in turmeric, coriander, cumin, and lime for at least 30 min, but preferably overnight.

2Sauté the chicken until browned and thoroughly cooked and put into bowl.

3Mix the hummus and the yogurt together until smooth.

4Whisk salad dressing ingredients together until combined.

5Cut up tomato and red bell pepper and toss into salad with dressing.

6Toast the pita and cut in half.

7Put the hummus mixture, chicken, and salad into each pita half.

I have the print out of sainsburys original recipe. It was published in 1995 and called Grecian Chicken. My family loves it and we have had it often over the years. I was so glad to find it online from Leslie Blythe (even though now called chicken Zorba as I had mislaid my copy (now grease splattered and on yellowing paper) and wanted to make for dinner tonight. Thank you Leslie’s nephew
