Cheesy Kielbasa, Rice and Broccoli

Cheesy Kielbasa, Rice and Broccoli is a dinner even your kids will love! This easy recipe comes together very fast and is made in one skillet for easy clean-up. Extra cheesy, and just bursting with flavor, it's a dinner recipe you'll find yourself making again and again.

Ingredients

1Tablespoon olive oil

1 Kielbasa, sliced

1 small onion, diced

1 small bell pepper, diced

½ teaspoon salt

½ teaspoon pepper

2 cloves garlic, minced

1 cup white rice

2 cups chicken broth

2 cups broccoli florets

2 cups Cheddar cheese, shredded and divided

Directions

1Heat olive oil over medium-high heat in a large skillet.

2Brown kielbasa in the skillet, 3-4 minutes on each side. Remove to a plate.

3Sauté the onion, bell pepper and garlic for 8 minutes.

4Add the rice to the skillet and stir to combine. Continue stirring for 1 to 2 more minutes.

5Add the chicken broth and bring to a boil. Reduce heat to low, cover, and cook for 15 minutes.

6Add the broccoli to the top of the rice and cover again. Cook an additional 5 to 7 minutes or until rice is tender.

7Stir in kielbasa, broccoli and 1 cup of cheese.

8Top with remaining cup of cheese. Cover with lid and let sit for 2 to 3 minutes or until cheese is melted.

Very yummy l fed my 16 residents this, but added peas and carrots and used brown rice and they loved it. I will definitely make this again

Yummm! I was craving asparagus so substituted fresh asparagus for the broccoli and it is super good. Didn’t have to change the cooking time at all and the asparagus was done to the perfect crispiness. It is great without the cheese, but added cheese individually for those who wanted it. I will definitely make this again!!

I grew up eating kielbasa but the only alternate from having it with sauerkraut or on bread was Gram adding it to spaghetti sauce! This is a great casserole recipe, with some minor changes: I cut up and cooked the kielbasa in the toaster oven to bring out more of its flavor and to remove more of the fat; I used broth leftover from boiling chicken, which was already seasoned; to save time I used frozen cut up peppers and onions; and I used brown rice instead of white. It is yummy.

Our11 year old son found this recipe on his own and has been begging to make it for our family. I finally bought the necessary ingredients this weekend. He was able to make this dish all by himself. His four brothers all loved it!!! We will most likely be serving this dish again soon!
