Cheesy Beef & Zucchini Casserole

This Cheesy Beef & Zucchini Casserole is a great way to use up some of the zucchini in your garden! It's delicious.

  • Cook: 40 mins
  • Yields: 8 Servings

Ingredients

4 cups shredded unpeeled zucchini

½ teaspoon salt

2 eggs

1/2 cup Parmesan cheese, grated

2 cups (8 oz) shredded part-skim mozzarella cheese, divided

1 cup (4 oz) shredded cheddar cheese, divided

1 pound ground beef

½ cup onion, chopped

1 medium green pepper, chopped

15 ounce can Italian tomato sauce

Directions

1Place zucchini in strainer; sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture.

2Combine zucchini with the eggs, Parmesan and half of the mozzarella and cheddar cheeses. Press into greased 13-in. x 9-in. baking dish. Bake, uncovered, at 400° for 20 minutes.

3Meanwhile, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.

4Sprinkle with remaining cheeses. Bake 20 minutes longer or until heated through.

This is so tasty! I made it last night and wasn’t sure if my kids would even try it. They are not usually willing to eat casseroles. Everyone in the family loved it, especially my husband! It was like lasagna without the noodles, and I loved that I could squeeze in the veg. I’m going to shred all our extra zucchini for the freezer so we can make this over the winter.

I agree! I add an Italian seasoning mix a local bakery /deli sells to the meat step. Its a very versatile recipe and easily adapted to different tastes.

I had forgotten about this recipe and I have made it twice this month. I added some garlic powder and Italian seasoning. It’s surprisingly good for something so simple.

This is my new favorite. I have a hard time making anything else with meat sauce now. I make the full casserole and freeze what I don’t eat the first night into individual servings for lunch. Once it defrosts and you pour off the excess liquid, it is perfect after a minute in the microwave. I’ve had to make the casserole and take to work because of the wonderful aroma as it heats up. I made it when my sister came to visit and it’s on her weekly rotation now too. Great way to use up zucchini and something I don’t get tired of. Thanks for a great recipe!

This dish is actually very delicious. The recipe was modified to use what I had on hand. I used swiss and Italian six-cheese blend, fresh tomatoes, and fresh basil. yum!

One of our favorite recipes for using up zucchini! So delicious.

Ps. I’d love a different recipe printing format. The picture at the top of the recipe card prints and results in the recipe printing out on two sheets of paper which is kind of annoying. First world problems, I know. 🙂 Just thought maybe you weren’t aware of the way it was printing.

I thought I had totally messed this one up and we would have to buy pizza tonight. I forgot to squeeze the liquid out and then without thinking, I put the meat mixture on top without cooking the zucchini mixture. At that point I put it in the oven and crossed my fingers that something edible would come out. My family Loved it! They said it was better than lasagna. That’s a good thing because we have zucchini growing rapidly in our garden right now. We will make this one again. I added a little jalapeño pepper to give it a slight kick.
