Blueberry Dutch Baby

The health benefits of blueberries are plentiful. This Blueberry Dutch Baby makes a great breakfast. You can throw all the dry ingredients into a blender the night before and add the eggs and milk in the morning. Voila! You've got a delicious breakfast!

Ingredients

4 large eggs

1 cup whole milk

1 cup all-purpose flour

¼ cup granulated sugar

½ teaspoon finely grated fresh lemon zest

¼ teaspoon salt

2 tablespoons unsalted butter

1 cup blueberries, plus more for topping

Confectioners' sugar, for sprinkling

Directions

1Preheat oven to 425° F.

2Blend together eggs, milk, flour, granulated sugar, lemon zest, and salt in a blender.

3Place butter in a heavy 10-inch cast iron skillet or baking dish and place in the oven. Once the butter is melted, pour the batter into the hot pan, then scatter with berries. Bake until puffed and cooked through, 25 minutes.

4Top with berries, and sprinkle with confectioners' sugar. Serve immediately.
