Artichoke-Dill Dressing

Marinated artichokes kicks this dressing up a notch. This Artichoke-Dill Dressing has many uses - crostini, potato salad, dip, dressing, etc. The possibilities are endless.

  • Prep: 5 mins
  • Yields: Makes 1 cup

Ingredients

1 - 6 ounce jar marinated artichoke hearts, undrained

6 tablespoons extra-virgin olive oil

3 tablespoons freshly squeezed lemon juice

1 teaspoon Dijon mustard

kosher salt and black pepper, to taste

3 tablespoons fresh dill, finely chopped

Directions

1Put all the ingredients in a small food processor or blender. Blend until smooth and emulsified.
