Apple Cider Caramel Sauce

Ingredients

2 cups apple cider

½ cup sugar

½ cup light brown sugar

5 tablespoons unsalted butter, cubed

¾ cup heavy cream

½ teaspoon kosher salt

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon vanilla extract

Directions

1In a medium saucepan set over medium-high heat, bring apple cider to a boil and cook until reduced to ½ cup, about 15 to 20 minutes.

2Reduce heat to medium-low and add sugars, butter, cream, salt, cinnamon, and nutmeg and mix to combine. Simmer until the caramel thickens and becomes rich brown in color, 12 to 15 minutes.

3Remove from heat and stir in vanilla.

4Let cool to room temperature. Use or refrigerate for up to 1 week. To reheat, microwave in 30-second increments, stirring after each, until desired consistency.

I had some leftover apple cider taking up prime real estate in the refrigerator, so I made this Apple Cider Caramel Sauce. All I can say is that it's life changing! It's beyond delicious - utter nirvana. You could pour it on ice cream, pie, or just about anything. You must try it!
