Tomato Curry with Coconut Rice

In an effort to not eat much meat, I made Nigella Lawson's Tomato Curry with Coconut Rice, which is a great meatless Monday meal. It's made with fresh cherry tomatoes, coconut milk, spices, and basmati rice. The curry is creamy and flavorful, and the coconut rice adds a touch of sweetness. I added some sultanas (golden raisins), which is a nice addition.

Chicken Biryani

In a traditional chicken biryani, richly spiced and perfectly fluffy basmati rice is lavished with butter and studded with dried fruit. The saffron-and-spice-infused rice is layered with sauced chicken, and the two are cooked together before being topped with fried onions and chopped herbs. However, it takes time to develop deep flavor by steeping whole spices and cooking the components in stages. This version, uses chunks of boneless chicken thighs and skipped the lengthy marinating. The onion is sautéed instead of deep-frying and then the chicken is browned in the same skillet. This dish is garnished with fried onion, fresh mint and cilantro, and an herby yogurt sauce.

Crispy Korma Salmon with Coconut Rice and Cucumber Pickle

My husband has been binge-watching Jamie Oliver cooking videos on YouTube. We have been fans of him for years. We used to live a few blocks away from him in London when he first got married. We decided to try this Crispy Korma Salmon with Coconut Rice and Cucumber Pickle, which is very easy to make and packed with flavor. I could not find Patak’s Korma Spice Paste, so I used curry paste instead, unfortunately for me, I could only find mild! The rice is cooked with a red chili, a half a lemon and some coconut cream, which is a new revelation. You chop up the lemon and chili and serve it on top to the rice. The quick cucumber pickle adds a bright note to this dish.

This Onion Bhaji recipe comes from a wonderful chef and talented photographer from London. Her name is Dimple and she has a vegetarian FaceBook page that I have contributed to for years called Sharing Food With Shivaay Delights. It's a fantastic source for interesting vegetarian recipes.

Indian food is one of my desert island foods. I suppose I would have to add Italian too! Anyway, I have always loved onion bhaji. I saw Dimple make these online using a muffin tin, which appealed to me. I couldn't find my regular muffin tins, so I used a mini tin. I really don't like deep frying things. These came out very flavorful, though not quite as crispy as usual, it's lower in fat and just as good. The recipe calls for gram or chickpea flour. I am very lucky to live super close to a large Indian market, though Bob's Red Mill had this flour as well.

The next time I am in London, I would love to meet Dimple in person!
