Slow Cooker Pork Tacos with Pineapple Salsa

I served a taco bar at a party I catered last weekend. Pork was one of the options. I also made chicken and a vegetarian option.

Slow Cooker Pork Tacos with Pineapple Salsa

Yield: 10

Ingredients

    Pork
  • 8 lb bone in pork shoulder, skin trimmed off
  • 5 Tbs garlic powder
  • 3 Tbs dried oregano
  • 4 Tbs chili powder
  • 3 Tbs cumin
  • 3 Tbs paprika
  • 4 Tbs brown sugar
  • 2 chipotle chilis in adobo sauce
  • 6 Tbs olive oil
  • 8-10 garlic cloves
  • juice from 2 - 20 oz cans of pineapple tidbits in 100% pineapple juice
  • Salsa
  • 2 - 20 oz cans pineapple tidbits in 100% pineapple juice
  • 15 oz can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 poblano peppers
  • fresh cilantro
  • Corn tortillas

Instructions

    Pork
  1. Combine the garlic powder, oregano, chili powder, cumin, paprika, brown sugar chipotle chilis, olive oil, and garlic cloves in a food processor and mix until a paste. Stir it into the pineapple juice. Place the meat in a slow cooker. Pour the paste all over the meat.
  2. Set to low for 6 hours.
  3. At the end of the 6 hours pull out the pork and place into a big baking dish.
  4. Shred the pork and place the meat right back into the broth. Let it sit for 30 mins on warm.
  5. Salsa
  6. Place the poblano peppers onto a baking sheet and pop them under the broiler. Char on all sides. Place the peppers into a glass bowl and cover with plastic wrap. The steam will allow you to easily pull the skin off. Let it sit 10-15 mins before peeling the skin off by hand. Dice the peppers.
  7. Add the pineapple tidbits, black beans, poblano and red peppers, the red onion and fresh chopped cilantro. Stir together and season lightly with salt and pepper.
  8. Warm the tortillas wrapped in a damp cloth in the microwave for about 30 seconds depending on the power of your microwave.
  9. Stuff the tortillas with some of that shredded pork and top with the salsa.
