Egg & Avocado Salad

Being a huge fan of egg salad and avocados, this is a marriage made in heaven. You can adjust this recipe to your own tastes.

Egg & Avocado Salad

Yield: 2


  • 4 hardboiled eggs, peeled and chopped
  • 1 medium avocado, diced
  • 2 Tbs green onion, diced
  • 1 celery stalk, diced
  • 1/4 cup cucumber, seeded and diced
  • 1-2 Tbs Dijon mustard
  • 2 tsp white wine vinegar
  • Sea Salt and pepper to taste


  1. Combine all in a bowl, stirring well to combine mashing some of the avocado and egg a little bit. Taste and adjust mustard, vinegar, salt and pepper to liking.
