Ranch Style Beans with Jalapenos!

I found this Taco Soup recipe using my all time favorite canned beans – Ranch Style Beans with Jalapenos. I love eating these beans with hot dogs or BBQ pulled pork sandwiches. They have just the right amount of heat.

Also included in the recipe below is a recipe for homemade ranch dressing mix and taco seasoning.  This is very good because they contain no salt!

Taco Soup

2 lbs ground beef
1 small onion, chopped
1 can pinto beans with jalapenos
1 can kidney beans
1 can Ranch Style beans
1 can diced tomatoes with green chiles
1 can stewed tomatoes, undrained
1 can yellow hominy or corn
1 pkg ranch dressing mix (or make homemade – see recipe below)
Water or beef broth
Sea salt and black pepper to taste

In a skillet, brown the beef with the chopped onion and drain.  Open the cans of beans and drain, except for the ranch-style beans.  Drain the hominy/corn.

In a large pot, combine the beef with the beans, tomatoes and hominy.  Add the spices.  Stir.  Then add enough beef broth or water to cover the other vegetables.

Let the soup simmer 30-40 minutes until all the flavors are blended.  Serve warm with crackers, corn bread, or biscuits.

Garnish with grated cheddar cheese and sour cream.

Homemade Ranch Dressing Mix
3 Tbs dried parsley flakes
1 tsp garlic powder
1 tsp onion powder
1 tsp ground black pepper

Taco Seasoning
1 Tbs chili powder
1½ tsp ground cumin
½ tsp paprika
½ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp ground oregano
¼ tsp crushed red pepper flakes
